Pavlova – sweets for my sweets

I’ve heard this name  several times but never tested,  heard the taste was the most mouth watering of ever and UN-explainable dessert and when you have it, you’ll be out of this world! Really???!!!…..so it’s the best time to try it. hohoho

Pavlova is named as a tribute to a Russian ballerina, Anna Pavlova, who toured NZ and Australia in 1926. Actually it is a dessert or after dinner sweet-treat which made of meringue with a crisp crust and soft-light inner (marshmallow-like…..mmmm for me, it tastes better than marshmallow), topping with sour fruits and whipped cream.

I should make it more crunchy and crispy as what the recipe does, but we’re too eager and can’t wait for an hour to have it.

I welcomed this “ms. Pavlova” from my kitchen for our dessert last weekend….whoa!whoa! Unbelievable…… Just imagine an 8″ pavlova gone within ~15 mins by 4 of us!!??? Alhamdulillah, it’s really, really the best and the simplest dessert I’ve ever made and for all my readers out there, i’ll share the recipe here. Try it and you’ll deserve it; or just grab and pay for it at cakeStories  if you are lazy enough to make it……hahaha

Pavlova (modified recipe):

Ingredients:

  • 4 egg whites (XL)
  • 100g of fine granulated sugar
  • 1 tsp of  lemon juice
  • A pinch of salt
  • 1 tsp of pure vanilla extract
  • 250ml of whipping cream
  • Fresh fruit (strawberries/ raspberries/ kiwi/ peaches/ blueberries)
  • **** salt & lemon juice used to change the substitute of cream of tartar****

Preparation:

  1. Preheat the oven to 275F (140C). Line a baking tray with baking paper. Set aside.
  2. Beat the egg whites on medium speed. Beat until the whites form soft peaks.
  3. Gently sprinkle the sugar into the egg whites, one teaspoon at a time. Don’t just lump the sugar in the bowl and never stop beating the eggs until you finish the sugar. Your egg whites should now be glossy stiff peaks.
  4. Sprinkle the salt on the meringue and fold in gently with a plastic spatula. Add the vanilla and lemon juice, gently fold the mixture again.
  5. Now gently spread the meringue and make a circular base (~8inch)  on the baking tray. Make sure the edges of the meringue are slightly higher then the center so you have a very slight well in the middle.
  6. Bake the meringue for about 1 hour till turn to brownish or egg shell colour.
  7. Before serving, take the meringue out of the oven and remove it gently and place on a plate.
  8. Whip the cream and spread the cream on top of the meringue.
  9. Arrange the slice fruits on top.

 

 

 

 





Homemade healthy snack for all……

Have you ever heard about healthy snack? Not just for your kids but whole of your family, friends and bla..bla..bla…What will happen if your love ones love to eat junk foods – Twisties, Mr potatoes, Ring Ring and many2 more in the stores out there? Yes! You can change the habit with a homemade healthy snack – mix nuts with raisins! …just spend your time to bake all the mix nuts in your oven since I found it was really an expensive snack to buy just for a small pack with RM7-RM8!! And the most important thing, these snacks is the best ideal super food contains vitamins, minerals and a practical alternative rather than crunching junk-foods! And good news for bride/ bridegroom to be, parents, whom still looking for any healthy budget gift for their special treats….look for the price…….

It’s all from breads……

How many of you always left a few bread slices in the plastic? Either you just dump it due to expiry date or even throw it to fed fishes or tortoise in the pond as what I did before……If you’re creative enough, you can serve your family with just a twist recipe from these breads! I’m often thinking of what for breakfast during schooldays….and this is a new version of a healthy wealthy meal! Apple fruity bread pie, tasty, healthy, a delightful food to enjoy and no more wasteful activity..hahaha…– why don’t you have a try???

Ingredients:

A: 6 breads
   1 tbsp sugar
   1 box of  UHT milk
   2 tbsp butter
   2 large eggs
   1 tsp baking  powder
B: Handful of dried mix fruits
   2 red  apples (diced)
   Mozzarella cheese
  1. Mix all ingredients in A together into a food processor or just blend it well till firm.
  2. Remove the mixture, put into a bowl & mix in the B ingredients except cheese.
  3. Stir occasionally and divide the cake mixture between the paper cases (I use ~ 8 pcs 5.5oz soufflé cups)
  4. Garnish with cheese on top of it & bake in preheated oven, 120oC till lightly brown.




Super Foods For Your Kids….

Have mommies facing these situations??……”I don’t like the greenish on my plate!”; “can i have the candies???”; “I wanna ice-cream! I wanna ice-cream!” ……..and you will keep on yelling NO to this, NO to that!

Babies & toddlers can be very fussy eaters. Promote your child with the healthy picks by supplying the basic components of our diet – carbohydrates, protein and fat. Even myself hardly to get my kids having all those complete diet but ensure they get at least two servings of the supplement daily. These roles vary from boosting energy and brain power to preventing illness and even repairing damages. In any diet, whether child or adult should get eating lots of fruits and vegetables. So here are some of the tips to train your child taste buds!

1. Fruits & Vegetables (Vitamins, minerals & dietary-fiber)

– Not all the toddlers would have the greenish on their snack plate. Parents plays role to create creative ways to decorate their meals! And what I usually do is filling the scramble eggs with grated carrots for a sandwich. Or just add-in their scones with dried mix fruits and spread with blended cheesy spinach! And even you can serve them well with fresh mix vege & fruits with Malaysian garnish….

– Scones spread with blended spinach! Really -really a mouth watering meals of the day!

-hmmmm……so yummy!! Bright colors would perhaps attract the kids to eat!

2. Whole Grains (Fibre & Vitamin E)

– Whole grains are typically fortified with folic acid, Vit.B, D, Iron, zinc and sometimes calcium too. Oats are one of the most familiar hot cereals for kids and nutritious grain for the brain. Take note that oats provide excellent energy or fuel for the brain that kids need first thing in and fed all morning at school. Simple cereals to give with sliced banana for breakfast…

3. Nuts and seeds (Good fats, fiber, protein, Omega3 & 6 oils, minerals – magnesium & potassium)

– Luckily I didn’t have any problem in this serving…..my kids are nuts hunger! Since I am a baker, there always packed of variety nuts in my keepers for them.  According to an Australian nutritionist, a handful of almonds, cashews, pumpkin seeds or walnuts are ideal super food as a mid-morning snack. Change their habits of taking junk-food with any of these combination ………Or just baked them cuppies like this!

4. Dairy (Rich in calcium)

– Rich in calcium is a key ingredient for strong bones and teeth, healthy heart and nervous system. Certain dairy product such as yogurt and milk also contain protein, Vit.A, B12, riboflavin and magnesium. Well, fed your kids well enough with this which can help promote their inner health.
