Pavlova – sweets for my sweets

I’ve heard this name  several times but never tested,  heard the taste was the most mouth watering of ever and UN-explainable dessert and when you have it, you’ll be out of this world! Really???!!!…..so it’s the best time to try it. hohoho

Pavlova is named as a tribute to a Russian ballerina, Anna Pavlova, who toured NZ and Australia in 1926. Actually it is a dessert or after dinner sweet-treat which made of meringue with a crisp crust and soft-light inner (marshmallow-like…..mmmm for me, it tastes better than marshmallow), topping with sour fruits and whipped cream.

I should make it more crunchy and crispy as what the recipe does, but we’re too eager and can’t wait for an hour to have it.

I welcomed this “ms. Pavlova” from my kitchen for our dessert last weekend….whoa!whoa! Unbelievable…… Just imagine an 8″ pavlova gone within ~15 mins by 4 of us!!??? Alhamdulillah, it’s really, really the best and the simplest dessert I’ve ever made and for all my readers out there, i’ll share the recipe here. Try it and you’ll deserve it; or just grab and pay for it at cakeStories  if you are lazy enough to make it……hahaha

Pavlova (modified recipe):

Ingredients:

  • 4 egg whites (XL)
  • 100g of fine granulated sugar
  • 1 tsp of  lemon juice
  • A pinch of salt
  • 1 tsp of pure vanilla extract
  • 250ml of whipping cream
  • Fresh fruit (strawberries/ raspberries/ kiwi/ peaches/ blueberries)
  • **** salt & lemon juice used to change the substitute of cream of tartar****

Preparation:

  1. Preheat the oven to 275F (140C). Line a baking tray with baking paper. Set aside.
  2. Beat the egg whites on medium speed. Beat until the whites form soft peaks.
  3. Gently sprinkle the sugar into the egg whites, one teaspoon at a time. Don’t just lump the sugar in the bowl and never stop beating the eggs until you finish the sugar. Your egg whites should now be glossy stiff peaks.
  4. Sprinkle the salt on the meringue and fold in gently with a plastic spatula. Add the vanilla and lemon juice, gently fold the mixture again.
  5. Now gently spread the meringue and make a circular base (~8inch)  on the baking tray. Make sure the edges of the meringue are slightly higher then the center so you have a very slight well in the middle.
  6. Bake the meringue for about 1 hour till turn to brownish or egg shell colour.
  7. Before serving, take the meringue out of the oven and remove it gently and place on a plate.
  8. Whip the cream and spread the cream on top of the meringue.
  9. Arrange the slice fruits on top.

Aug 1st – Pandan layered cake for Berbuka puasa……this was the best idea from a mum, a teacher and a cook for her family, Pn. Sabariah…….it was really refreshing dessert and totally to see something different on the table this Ramadhan….TQVM k.Saba!!





Dinosaur Eggs in my kitchen!

Ermmm…..It’s quite a bz days for me lately! We’re in school holidays mode – enjoying days with celebration, parties, weddings and weekend outings. How many times have you picked up a scent that brings back memories to you? Whether it is the smell freshly baked cookies or cakes, bouquet of lilies, scent really can provoke powerful emotions in us, reminding of a time or experience associated with that scent!

Grown up surrounded by aroma of cakes baking and delicious pastries remind me during all the days with my loving mom, when running a humble home baking business which I thoroughly enjoyed helping out. That’s what happens to both my kids now huh!

Last week project – these colorful mini ‘dinosaur egg muffins’ (named by my son Haziq – what a wonderful eggs! What eggs??? Dinosaurs! hahaha…..) ordered by one of my nice neighbor for her kids school holidays party. We enjoyed the time doing these mini tiny muffins, the only cutest fluffy muffins without butter or margarine needed, no baking, and it’s really a healthy snack for all with tasty flavored filling inside!

Plan for visiting friends or family? Why not surprise them with a box or packets of these assorted mini muffins. They will certainly be appreciated and become the talking point of the evening. It’s worth to try….so, just pick up the phone & dial my numbers!!!

SUPERBUG Vs BRAIN BOOSTER

Alhamdulillah…..May Allah blesses us with a good strength and health! Caring with regular exercises and good food can improve our immune system, especially to our kids, make sure they really washes their hands properly to avoid a very-very super duper virus now….SUPERBUG! What is Superbug? Super bug is a bacteria of Antibiotic resistant organism as it is identified in 37 people who returned to the UK after undergoing surgery in India or Pakistan. This Superbug is as much powerful that it is resistant to most powerful antibiotics so UK/ British scientists passed a warning that it will appear worldwide. Researchers’ already passing warning about this Super Bug as it will spreads more where the health system is low which is not having adequate medicines/ antibiotics. Even though it considered being extremely infectious in nature, which completely resistant from all antibiotics known at present, we still can avoid this by maintaining our cleanliness.  InsyaAllah…..Stay Clean!!!

Yes!!! Talking about good-quality food, I’ve read a book during ‘long holidays’ last few month….. (Silent is golden rite??), and it’s more about brain food which guide you how to boost your brain power. Throughout life, our brain is the busiest place for receiving, processing, storing and generating all information, thus we need to provide it with the correct combination of nutrients, make it able to think quicker, clearer memory and maintain with brighter outlook! May be I’m the one who ignore it, that’s why I cannot start my blogging before…hihihi……

First, I won’t write much here, someone is going to zzzzz then! I’ll jot few tips on how fruits and vegetables in natural bright colours can boost your brain!

  1. RED PEPPER: The red colour is due to the presence of high levels of beta-carotene – a vitamin A precursor and has 20% more vit.c than the green one.

2. ONION: The yellow comes from anthoxanthins, powerful protectants      against free-radical damage – earliest known foods to be used as a medicine for colds.

3. BROCCOLI: Rich in beta-carotene, also evident in carrots – without it broccoli would be a much lighter green. When buying these, choose the darkest, greenest stalks on display and cook lightly – a cup of cooked broccolis contains more vitamin C than 2 oranges!

4. TOMATO: Coloured red because of the strong antioxidant lycopene.  Pick or pluck the reddest, smallest and freshest only is the best!

5. CARROT: The orange colour comes from beta-carotene, the precursor to Vit.A

Homemade healthy snack for all……

Have you ever heard about healthy snack? Not just for your kids but whole of your family, friends and bla..bla..bla…What will happen if your love ones love to eat junk foods – Twisties, Mr potatoes, Ring Ring and many2 more in the stores out there? Yes! You can change the habit with a homemade healthy snack – mix nuts with raisins! …just spend your time to bake all the mix nuts in your oven since I found it was really an expensive snack to buy just for a small pack with RM7-RM8!! And the most important thing, these snacks is the best ideal super food contains vitamins, minerals and a practical alternative rather than crunching junk-foods! And good news for bride/ bridegroom to be, parents, whom still looking for any healthy budget gift for their special treats….look for the price…….

I’m Back!!!!…

As Salam and hi! hi! to all!!!!!….miss me huh! Well, that’s our life journey….being up and down but always remember, passed is passed, life must goes on! It’s been mid of the month Cakestories in a silent mode (silence is golden? hahaha…), no updates, no stories,……baking? Yes, and it is a must for me!  Actually I got so many2 ideas and many2 stories to jot and share with all of you here….I won’t type much in this entry then, I’m in the midst of preparing my pamphlets and mini catalogue…Raya is coming, another 4 months to go baby! And perhaps all knows the ‘tight schedule’ for the bakers now..…..so just have a nice view from my baking collections for last 2 weeks…….Thank you so much to teacher Akma for the muffins order! Hope your kiddos in the nursery enjoy the treats! Mmuaaahh!

Muffins & Cupcakes of the day

Muffins or cupcakes are made by folding the ‘wet’ ingredients (eggs, melted butter, milk & etc) into the dry ingredients (flour, baking powder & dried fruits). Do you know that cupcakes or muffins are best served freshly baked! However, if making ahead, they’ll keep well in airtight container for 24 hours, but if keeping them for more than a couple of days, it’s best to freeze them. Last weekend, I made few cups of chocolate muffins, mix fruits and carrot walnut cuppies for the kiddos….Enjoy the pics
